Ready to discover how a perfect carbonara really looks and tastes?

Meet your hosts and small group at the steps in Piazza Trilussa at 5:00 pm, and head to a restaurant located in the heart of the neighborhood and beloved by locals. Be welcomed with a glass of wine, and discover the great creative idea of a local chef. You’ll fall in love with her sense for taste and innovative food style based on tradition and quality.

Here you’ll find the first Italian carbonara menu, dedicated to carbonara only. Yellow, green, purple, and black are just some of nuances achieved using different ingredients including saffron pistils, crispy artichoke, purple potatoes, and truffles. You can also have a carbonara a modo tuo (your own way), choosing the type of pasta and type of eggs you want. Take your seat in front of the kitchen and learn what’s behind the recipes, all of which focus on ingredient choice and the world of organic food.

Then, tie on an apron and get ready for your hands-on class. Select ingredients under the surveillance of the chef and create your recipe step by step. Learn how to select high-quality pasta, eggs, and guanciale (cured pork meat). If you are vegetarian, you can make an amazing vegetarian dish that will be beloved by meat eaters as well. During the lesson, discover the history and legends behind one of the most beloved Italian pasta styles and learn to put a creative spin on this dish, including how to cook a very unusual carbonara that looks like gelato to surprise your guests back home.

Finally, give great attention to the wine list. Why? There is no better way to appreciate an amazing dish than pairing it with the right wine, so learn to choose the perfect wine for the recipe for a complete tasting experience. You will be free to express your preferences and opinion, since the chef strongly believes ‘the best pairing is what you like.’

After a sit-down dinner to enjoy the freshly made feast, the 2.5-hour experience ends at the restaurant at 7:30 pm.
